St. Patty’s Day Potluck – Revised

We’re having a potluck on Tuesday at work.  I’m bringing my mom’s mini cheesecakes, which are heavenly on their own, but to mix it up (and make it green) I’m making them mint.  Hopefully it will work, here’s the recipe (from memory, I may have to make revisions later):

  • 1/2 c. butter or margarine
  • 1 bag Nilla Wafers
  • 1 bag chocolate chips
  • 1/2 c. light corn syrup
  • Three 8 oz. of cream cheese
  • 1 cups of powdered sugar
  • Green food coloring for St. Patty’s
  • Fresh fruit toppings or Ande’s mints and mint sprigs

Preheat oven to 300 (?)

Crush Nilla Wafers to crumbs.  You can put them in a ziplock bag and roll them with a rolling pin, put them in a coffee grinder, or my dad’s favorite, put them in a ziplock and run over them with your car.

In a saucepan, melt chocolate chips with corn syrup and butter.  Add Nilla crumbs.

Press mixture into muffin tins. 

Let harden in fridge.

While it’s hardening, beat cream cheese and powdered sugar together.  

Once the crust is hard, fill with the cream cheese mixture, and top with fresh fruit or chocolates.  Chill and enjoy!

Makes…a lot.
