Mind Meltingly Awesome Choclate Chip Cookies

On Sunday I threw a bridal shower for Michelle.  It was a dessert shower, and my comtibution (you may have guessed) was Mind Meltingly Awesome Chocolate Chip Cookies, snatched from here, with a few minor tweaks.

Here’ s the recipe for you to enjoy:

2 cups plus 2 tablespoons all-purpose flour

1/2 tsp baking powder

1/2 teaspoon salt

12 tbsp butter, melted and cooled

1 cup brown sugar (I like to use dark brown for a richer, butterscotch taste)

1 tbsp vanilla extract

1 egg + 1 egg yolk

About 2 1/2 cups of fillings (chocolate chips, nuts, mini marshmallows, M&Ms…)

Preheat oven to 350-370…the higher the temp, the puffier the cookies.   Line 3 or 4 cookie sheets with parchment paper.

Whisk together flour, salt, and baking powder in a medium bowl and set aside.  In a separate large bowl, whisk the egg and yolk with the brown sugar until well combined.  Add melted butter and vanilla, stirring well to combine.  Fold in the dry mixture until the flour is well incorporated.  Add the mix-ins- I used semi-sweet chocolate chips, M&M’s, mini marshmallows, and one Rollo each for gooeyness.

Scoop heaping tablespoons onto parchment lined baking sheets and bake for 10 minutes (for 370 degrees) to 14 minutes (for 350 degrees.)   I got 32 cookie out of this.

The results were rich, messy and yummers.
